Abstract

Abstrak

Penyakit penyebab keracunan pangan atau foodborne disease masih menjadi persoalan serius yang harus dihadapi oleh masyarakat dunia. Salah satu penyebab foodborne disease adalah kontaminasi mikroorganisme patogen pada bahan pangan. Agen utama mikroorganisme yang menyebabkan keracunan pangan yaitu bakteri. Salah satu bakteri patogen yang banyak mengontaminasi dan penyebab keracunan pangan ialah Cronobacter sakazakii Susu bubuk formula merupakan salah satu sumber pangan yang banyak terkontaminasi oleh bakteri Cronobacter sakazakii. Cronobacter sakazakii dapat menyebabkan penyakit foodborne disease dengan gejala ringan sampai berat yang dapat mengakibatkan kematian. Oleh karena itu, perlu dikembangkan metode deteksi yang cepat, sensitif, spesifik, akurat, dan efisien dalam mendeteksi keberadaan Cronobacter sakazakii pada susu bubuk formula. Metode real-time Polymerase Chain Reaction (rt-PCR) merupakan metode biologi molekuler yang dapat digunakan sebagai metode deteksi yang cepat, sensitif, spesifik, akurat, dan efisien untuk mendeteksi keberadaan bakteri patogen pada sampel pangan. Penelitian ini bertujuan dari untuk mendapatkan hasil mengenai uji pendeteksian keberadaan bakteri Cronobacter sakazakii secara cepat, sensitif, dan akurat dengan metode real-time Polymerase Chain Reaction pada susu formula.

Abstract

Diseases that cause food poisoning or foodborne diseases are still a serious problem that must be faced by the world community. One of the causes of foodborne disease is contamination of pathogenic microorganisms in food. The main agents of microorganisms that cause food poisoning are bacteria. One of the many pathogenic bacteria that contaminate and cause food poisoning is Cronobacter sakazakii Milk powder formula is one of the many food sources contaminated by Cronobacter sakazakii bacteria. Cronobacter sakazakii can cause foodborne disease with mild to severe symptoms that can result in death. Therefore, it is necessary to develop a detection method that is fast, sensitive, specific, accurate, and efficient in detecting the presence of Cronobacter sakazakii in formula milk powder. The real-time Polymerase Chain Reaction (rt-PCR) method is a molecular biology method that can be used as a fast, sensitive, specific, accurate, and efficient detection method to detect the presence of pathogenic bacteria in food samples. This study aims to obtain results regarding the detection test for the presence of Cronobacter sakazakii bacteria quickly, sensitively, and accurately with the real-time Polymerase Chain Reaction method in formula milk.
